
My favourite feature of this Turkey Meatball Soup is that it makes a great leftover meal. I usually double the recipe and we have seconds the same day and leftovers the next day. And it is also super lean, healthy and super-super easy to make! And kids love it too! And low in fat, full of protein and healthy complex carbs. And only 199 calories & 5 WW points+ per 2 cup serving!I’m annoying today, I know. But hey, it’s my grandma’s soup and it’s Valentine’s Day today.
Look at my breakfast this morning. I had 3 of those for breakfast. Totally against my or Chalean’s rules.
And look at all the sweet stuff I have in the house today. Cupcakes are for the kids. I’m not a store made cupcakes eater.
And have you seen these before? Dark chocolate covered raspberries. I’m in!
And of course I have a freezer full of my Low Carb & No Bake Greek Yogurt Mini Cheesecakes.

Look at these cupcakes in an ice cream cone. Isn’t that a great idea?! My neighbour Liliana made these for her son’s Birthday today. How sweet and thoughtful! Not like me with my store made cupcakes for my kids tonight.
I usually make this soup in the morning so it’s ready for lunch and … dinner. It is so good, everyone eats it twice the day I make it. I remember, one time my friend Nicole, called me around 9AM and asked me what I was doing. I said “Making soup for lunch”. She said “Already?!”. It made me think “Yeah, I guess it is weird.”:) But it works for me.:)
I love that because having 3 boys I’m a slave to my kitchen, trust me! I’m a very frugal person but lately I’ve been spending so much time in the kitchen, that I’m thinking of a kitchen reno. I would take that over any wardrobe makeover or a holiday. And if I could buy an entire stock of Pier 1, I would!
This soup is great any time of the year. I have a vivid memory of my grandma making this soup during the hot summer days. We would play outside all morning, then she would call us for lunch. You come in the kitchen and here it is – a bowl of freshly made soup, steam going up in the air, the smell of fresh herbs, with a piece of fresh and soft Ukrainian rye bread.
I want those days back!!! Those were good days! Don’t we all have such vivid memories of our grandparents and childhood summers?! Do you? Me and my husband do and we always bring those up while relaxing with a glass of wine. We both were lucky enough to have great grandmas!

Ingredients
- 8 cups water
- 1 large carrot, chopped in halves
- 2 stalks celery, chopped
- 2 medium potatoes, cut in large chunks
- 1/2 cup brown rice, dry & washed
- 1 lb extra lean ground turkey
- 1 medium egg
- 1 medium onion, pureed
- 3 bay leaves
- 5 black peppercorns
- 1/2 tsp salt
- Ground black pepper to taste
- 2 tbsp fresh parsley or dill, chopped
Directions
- In a large pot bring water to a boil.
- Add bay leaves, peppercorns, potatoes, carrot, celery and rice. Cover and reduce heat to low-medium.
- In the meanwhile, puree onion in a food processor. Magic Bullet works great. In a bowl add ground turkey, pureed onion, egg and half of salt and fresh ground black pepper to taste. Mix well to combine. Roll meatballs the size of ping pong ball and add them to the pot as you roll. Soup will be cloudy as you add meatballs, it will settle later.
- Cover and cook for another 20-30 minutes or until rice is cooked.
- Add the rest of the salt, fresh ground black pepper to taste, garnish with parsley or dill. Serve immediately with a piece of rye or whole grain bread.
